Trio bring French-influenced sandwiches, boba tea and pho to Round Rock 

If opening your own restaurant, consider doing what Candice Lui did.  

Lui teamed with longtime friends Jenna Choe and Eunice Tsang in opening Noble Pho in the University Commons shopping center on Nov. 29. Falling back on their individual expertise, Choe became head chef, Tsang took on beverages and Lui, who previously owned a café in Georgetown, took on front of house duties.  

“We all just work together and rely on each other’s strengths,” said Lui. “It would be too much if one of us did the whole thing.” 

With Noble Pho owners focusing on providing good service and good food, the restaurant boasts a lineup of boba-infused tea, coffee, pho, appetizers such as spring rolls, fried rice and bánh mi (Vietnamese sandwiches). Indicative of the restaurant’s goal, the bánh mi mayo is made in-house, the vegetables on the menu are fresh, the tea drinks are handcrafted and the coffee includes Café Du Monde coffee, which touches on the French influences on Vietnamese cuisine.

The restaurant was bustling with activity recently, an indication that Lui was correct about her guess that the area is ready to support a variety of good restaurants.  

“When we wanted really good Vietnamese or Asian food, we always went down to Austin,” she said. “Since we’re residents of Round Rock, we just want to bring something for people from Georgetown, Cedar Park, Leander and Round Rock… something solid and convenient.  

We’re hoping people from Austin will come up here.”
