Instill Coffee has brought its chill vibes and flavorful array of coffee, tea, pastries and more to Old Settlers Boulevard and Sunrise Road.  

Located in a new strip center adjacent to Buddy’s Burgers, Instill made its Round Rock debut Sept. 17. Begun as a food truck during the pandemic, it has operated a Cedar Park location since 2023.  

Stop by any time soon and you may be met with notes of cinnamon, maple and pumpkin. There’s a Pumpkin Pie Latte, Reese’s Cold Brew and Buttery Cinnamon Roll on the fall drink menu, not to mention the Autumn Crunch Toast – an enticing creation topped with apple slices, pecans, a housemade pumpkin butter and maple syrup.  

Its coffee line-up is largely defined by a colorful mix of ingredients. The Iced Cinnamon Dulce Latte is among the simpler menu items – with cinnamon, vanilla, espresso and milk – while its gourmet Cookie Butter Latte comes with Biscoff cookies, vanilla and milk and its Ocean Latte includes vanilla, sea salt caramel, espresso, blue butterfly pea flower and milk.  

Instill offers up a well thought out array of matcha drinks, each distinctive in their mint green coloration brought forth by the green tea leaf powder it utilizes. Ask for the Banana Bread Matcha, Ube Matcha or Orange Creamsicle Matcha (it’s green too). We’d like to petition for the matcha flight, featured this past summer at the Cedar Park location with all four of the above. And consider treating yourself to the royal strawberry matcha with salted cheese foam. 

There’s also a selection of signature drinks, the Instill Boost energy drink, tonics and other drink options available.  

The food menu is focused on various wraps, pastries and loaded toast items, such as the Verde Zingy Turkey Wrap – with oven-roasted turkey, lettuce, mayo, verde sauce and Monterey Jack cheese – and the Kimchi Avocado Toast, flavored by locally sourced vegan kimchi, avocado, scallions and organic sriracha on white sourdough.  

Dog lovers will be happy to note there are pup cups available, but that’s not the only canine-focused undertaking Instill has worked on in the past. Noting a passion to “instill good, inspire community,” Instill owners have supported canine-related causes, as well as food drives, and shown their love for educators.
