PS 35 Officially Opening May 23 in Round Rock

Located on the west side of Interstate 35 in Round Rock, PS 35, is a New York-style pizzeria and venue from Executive Chef Clint Elmore in collaboration with newly formed collective SMGB Hospitality Co.  The restaurant will feature hand-tossed, thin crust pizza, hot and cold sandwiches on fresh baked bread, a selection of inventive family-style Italian dishes, soft serve ice cream, craft beer, and cocktails in a lively, family-friendly atmosphere, complete with classic video games. Outside, the pizza, beer and boogie spill out into an outdoor pavilion, where live music and yard games will make the 15,000 square feet a community gathering space unique to the area.

In New York City, public schools are referred to by a PS number, and since our pies and design are totally a tribute to that city, we took the naming convention and incorporated the 35 from our location off the interstate,” said Christian Romero of SMGB. “We can’t wait to share Chef Elmore’s dishes with Round Rock and open the doors for guests to come experience the food, music, and fun at PS 35.

Inspiration for PS 35

The culinary focus will be on fresh, familiar Italian-American classics, with a few nods to more traditional flavor combinations and reinterpreted East Coast favorites. At its core, the menu is a fun reimagining of the neighborhood pizza joint, offering something for everyone. Chef Elmore lends his inspiration from training in Naples, Italy, and a stint at the famed Paulie Gee’s in Brooklyn. To further develop the PS35 menu, Elmore and partners took off on a pizza-eating tour of New York to test the work of the godfathers.

Highlights from the PS 35 Menu

Whole pies: Hot Honey – tomato sauce, pepperoni, Italian house sausage, ricotta, parmesan, and Mike’s Hot Honey;
 Margherita – fresh mozzarella, tomato sauce (on top of mozz), Pecorino Romano, extra virgin olive oil, and basil; and
 Sausage & Peppers – tomato sauce, Italian house sausage, roasted red peppers, shaved red onion, mozzarella, and fresh oregano.

Sandwiches: Meatball Sub – house meatballs, tomato sauce, caramelized onion, mozzarella, provolone, parmesan, and basil on a sesame hero; 
Hajji’s Chopped Cheese – ground chuck, provolone cheese, griddled onions, shredded iceberg lettuce, tomatoes, cherry peppers, and hot sauce and mayo on a sesame hero – this is a Bronx classic!

Pasta: Spaghetti-O’s & Meatballs – house meatballs, “spaghetti-o’s”, tomato sauce, mozzarella, provolone, and Pecorino Romano

Salads: Italian Chop – romaine, iceberg, radicchio, fried chickpeas, artichoke, grape tomato, olive, salami, sweety drop peppers, parmesan, provolone, and red wine vinaigrette; 
Spinach – spinach, Gorgonzola, green apple, pomegranate seeds, fried shallot, candied walnut, and sherry-Dijon vinaigrette

Bar: 2 rotating frozen taps featuring PS 35’s take on NY standards like the Manhattan Sour and Frosé
26 craft beers, most hailing from Austin and Round Rock area
Cane sugar soft drinks from Maine Root
